Greek Week

Reflection-

My greek meal had roasted potatoes, rice, greek salad, chicken souvlaki, pita bread, and tzatziki. The potatoes need more flavor and the tzatziki had a lot of dill. The pita bread was really good my group did a really good job on the bread. Next time I would taste and season the potatoes a little more.

Winter Break Home Lab

Reflection-

-Salmon with Mango Salsa and Rice

The main dish I was suppose to use salmon but I didn’t have it, instead I used a different kind of fish. I sautéed onions with the fish but found that it still needed more flavour. I also didn’t like the kind of fish and I think the salmon would’ve tasted much better with it. The salsa tasted really good but I had to take the raw onion out because I felt it didn’t go well with the mango. The rice tasted good and I mixed it with the fish. The process of making this meal was good but I wouldn’t make this again.

-Chicken Pot Pie

The appetizer turned out really good. The filling turned out really good. I bought the dessert crust so it was a little sweet but it still tasted good. Next time I would also cut the carrots and peas into smaller pieces. I cooked a few batches so cooked good but some I under cooked.

-Banana Muffins

For dessert I made banana muffins that turned out delicious! They were so soft and I would make this again. I added in chocolate chips in some of the muffins and it tasted great. It was super easy and took 10-15 mins to make.

Pasta Carbinara

Reflection-

Carbonara is an Italian pasta dish from Rome made with egg, hard cheese, guanciale, salt and pepper. We coated the pasta in a thick egg sauce with bacon and parmesan cheese. A super easy and fast dinner! The pasta was tender to the tooth and had parmesan which is where some of the flavor came from. I found my pasta was plain and didn’t have much flavor. Next time I would add more cheese, bacon, salt, and pepper. Another thing I would change for next time is adding a little more pasta water to the pasta. It was a super simple recipe and I would make this at home on my own.

Carbonara Pasta

Reflection-

This lab we made hand made pasta that was a two day lab. I missed the first day of this lab which was making the dough, the second day we stretched the dough and cut it into spaghetti. The Carbonara has bacon, garlic, onions, eggs, cheese, and parsley. When all the food was sautéed we had to add the spaghetti water and I added to much water and mine was a little to watery. I have never made carbonara pasta before and I really enjoyed it.

Chili with Cornbread

Reflection-

This lab was split into a two day lab. The first day we prepared and cooked the chili. The second day we made the cornbread and finished off the chili. I have never made cornbread before nd it tasted great with the chili. The chili was made of kidney beans, black beans, tomato sauce, corn, beef, onion, garlic, zucchini, and peppers. The chili was very flavorful and warm. I put my grated cheese on top with the avocado and cornbread for decoration and to make it appealing. My biggest challenge was giving that chili flavor because I found my chili was very plain, once I added in more chili powder it tastes more of a chili.

Porchetta Burrito

Reflection-

This lab we used porchetta as our protein in the burrito. Porchetta is a savoury, fatty, and moist boneless pork roast of Italian culinary tradition. The burrito also had grated cheese, beans, green onion, feta cheese, and sautéed peppers. This was a pretty straight forward lab, I worked well with my group and we were efficient. My favourite part of this dish was the porchetta, I have never had it before and it was very flavorful.

Breakfast Home Lab

Reflection-

For this home lab, I decided to make a breakfast bagel and a strawberry, mango smoothie. My smoothie turned out great and tasted delicous. Inside the bagel is ham, cream cheese, avocado, and a fried egg. I have it five stars because I would eat this again and is a fast breakfast you can make.

M&M Cookie/Brownies

Reflection-

My partner and I tried to make brownie/cookies. When we baked the batter it became one big cookie and didn’t turn out the way we wanted it to. We improvised and mushed the cookie together, made it into a square, and cut it into appetizer sizes. We also added M&M’s on top to make it halloween themed. Even though it didn’t turn out the way we wanted it to, it still tasted delicious!

Lava Cake

Lava Cake – Chocolate fondant, with the outside as a nice chocolate flavor and the inside with mellow filling. The lava cake is the perfect small batch of dessert! I made two lava cakes and one turned out great but the other wasn’t cooked enough and all exploded onto my plate. This was a self-evaluation lab, everyone had to work independently. I think I did a good job in the process of this lab and showing I’m capable to work alone.
