Skillet Cookie

This is the final thing I will be making for foods 12, it makes me sad. Looking through all my blogs with my parents and seeing all the time and effort I put into these blogs and everything I made, my progress through the semester even though I took foods twice before, I still improved and I will always work on my skills to make the best they can be. I started to follow a recipe for this dish but I stopped because the pan was too small and I didn’t have all the right ingredients and I’m really glad I finished off with this recipe because I had to use all my skills to decide measurements to do, I added marshmallows, semi sweet chocolate chips, I didn’t have brown sugar so I added granulated sugar and brown granulated sugar. I found out that brown sugar and brown granulated sugar have some things in common but they cab react very different in how they act and react. White sugar is purely sweet but brown sugar is a bit acidic with all the complexity that the molasses adds. There was also eggs and vanilla and stuff you usually use in a cookie. I only could eat about a quarter if that because it was so sweet but I added some ice cream and it tasted so sweet and rich, I loved it!

Greek Week

This was top down one of my favourite meals to make! It had so much flavours and tastes. I’m not sure if I have ever had greek food at a restaurant but now I want to go there asap. It makes me hungry just thinking about this meal. It too two days to make, on the first day I prepared the potatoes by adding everything together and par cooking them and for the chicken I mixed everything together and let it marinate overnight. This made it much easier for the next day so everything could be done at the same time. On the second day, I first made the pita bread and let the dough sit aside, while I put the potatoes and chicken in the oven, I then started to cook the pitas. While flipping the pitas every once and awhile, I started making the greek salad and once that was done I finished off with the tzatziki sauce. No one complained about this meal, it was so delicious and I really want to make it again in the summer because it tasted like heaven. For the cookies, I made them after washing the dishes but these didn’t turn out as well. While following this recipe I added the amount of salt, it seemed like a lot but I trusted the recipe and I regretted that decision because all I could notice while eating them was the salt. Other than that everything turned out perfectly!

Chicken Parmesan Pasta

For the main meal this week I decided to make pasta and garlic bread, a lot of carbs. If I could change anything about this meal, it would be having a vegetable in it. I honestly completely forgot about a vegetable until I was writing about this. I liked the recipe for the pasta, I would definitely make it again, it was so creamy and delightful. I wasn’t planning to make garlic bread but my mom went to the store because I needed onions for the pasta and she also got bread so I decided to make it into garlic bread. The bread was so yummy! It was a perfect side meal for the pasta. This is probably one of my favourite meals, I’ve made because it made me work on my knife skills, time management, and my cooking skills. The pasta wasn’t thick enough so to fix it, I problem solved by adding corn starch into it, it worked well and it doesn’t have a taste so no one notice it. For the garlic bread, I blended butter and garlic together into a paste and drizzled it on top of the bread, then I added some parmesan and then put it in the oven! Everything was done at the same time!

Banana Pancakes

In the last few months I have been trying to eat healthier, although at dinner time I eat like I usually do because it’s hard not to eat what my family eats and I love cooking food that has carbs in it. For breakfast this week I wanted something that has some carbs in it so I decided to make pancakes that have bananas in it so I felt like it was somewhat healthy. In half of them I added chocolate chips because my sweet tooth betrayed me that day. I usually never have fruits in my pancakes, I like them plain or with something sweet like chocolate chips but I found it really delicious. It wasn’t hard to make, I followed a recipe from online that I found and it was pretty simple to follow. I have had bad experiences with cooking pancakes on my stove because the heating is hotter than it really is so they outside burns before the inside is fully cooked through but I was really happy with the final product. They were golden brown and fluffy, exactly how I wanted them to be!

Quinoa Salad

For this weeks meal I decided to make quinoa salad because I have been trying to eat more healthy and I thought, what’s more healthy than quinoa salad. It has a decent amount of carbs but it contains, it has all nine essential amino acids, fibre, minerals, and quinoa is known as one of the most healthiest and most nutritious foods on the planet. It didn’t take much time to make but it needed a lot of time to prep. While the quinoa was cooking, I had to prepare all the vegetables; cucumber, red pepper, red onion and chick peas. After chopping all those ingredients up I didn’t have time to make the dressing before the quinoa was done so I mixed all the ingredients together and let it sit in the pan to warm it up. The dressing consist of lemon juice, red wine vinegar, olive oil, minced garlic, salt and pepper to taste. I made 12 servings so I could have left overs after my family ate it for lunch, I wanted it for other meals throughout the week because its so healthy and I love the taste of this salad. It’s one my favourite salads!

Lava Cake

This recipe was one I found off the internet, it asked for icing sugar instead of granulated sugar and it turned out well. I shared this with my boyfriend because it was big and meant for two people, it was rich and of course gooey in the inside. I added some icing sugar to the top to give it a better presentation and it turned out well. the recipe asked for similar things to the one you provided, I needed to whip the egg for a long amount of time till it was fluffy. It took a bit longer to cook than the recipe called for because I used a cast-iron dish, it was bigger than the recipe asked for. It tasted so delightful and I would 100% make this again, I love chocolate lava cakes, they are so delicious and it wasn’t hard to make, more just time consuming. I would recommend this dish to anyone that has a sweet tooth and love rich chocolate desserts!

This time I found this recipe on YouTube while I was scrolling through it, they looked really good so I got my mom to get condensed milk so I could make them. It only needed three ingredients; butter, flour and condensed milk. It seemed like a simple recipe but the dough was extremely hard to roll, it would get stuck on the counter even though I used A bunch of flour so it wouldn’t stick. I ended up having to put it in the fridge and it became easy to roll out and make the circular shapes. When they were baking in the oven, I put the condensed milk in the instant pot so it would become caramel. When the cookies cooled down after they were taken out of the oven, I used a spoon to put the caramel in the middle of the bottom piece of the cookie and pressed the top piece to complete the cookie. In my opinion these aren’t my favourite cookies because they are more on the dry side and aren’t moist cookies like chocolate chip cookies.

Spaghetti and meatballs with garlic naan bread

I had left over tomato sauce in the fridge that I didn’t use in the chicken parmesan so my mom wanted me to use it in spaghetti, I found it very difficult to find a recipe that used tomato sauce as the main ingredient. I added some spices to give it more flavour, well the recipe asked for it and it ended up really good. I thought it wouldn’t taste as good as homemade spaghetti but I didn’t tell much differences. Because the spaghetti wasn’t homemade I challenged myself with making homemade meatballs and homemade naan bread because I didn’t have garlic bread. It was a bit difficult having to juggle three different things at once but I liked the challenge. The meat balls were moist and flavourful and I was really impressed with how they turned out. I really enjoyed the homemade naan bread, it was my favourite part. It wasn’t hard to make but I don’t have a good rolling pin so rolling them out till they were thin was a struggle. Overall, the meal was a hit in my family and I really enjoyed it.

Vanilla Buttercream Cake

This week I have another sweet tooth and wanted to make mini cupcakes but we didn’t own any mini cupcake trays so I decided to make a cake instead. I didn’t want it to be just boring vanilla cake so I decided to add sprinkles in and on top of it. I haven’t made any cakes recently, except the cheesecake one but that’s different so I found it more fun to make than cookies because I make cookies all the time. I only had two eggs left and the recipe asked for three but while eating the cake, I didn’t notice any differences. The cake was dense and sweet. The cake disappeared within three days! The only challenge I had was it was supposed to cook for 30-35 minutes but it ended up cooking for almost an hour because the recipe asked for two layers, meaning two different cake tins but I don’t own two of the same size so I just made it in one bigger one. It still worked out really well and I would make this cake again in a heartbeat. It was delicious!

Korean rice bowl

This dish was pretty simple and tasted so flavourful! I was searching up recipes to make for dinner because my mom wanted me to make dinner to help her out and this one sounded appetizing. It only took 20 minutes to make, I got the ground beef out, put it on the stove and cook it through till there is no pink. In the meantime I got the rice going. I then mixed together soy sauce, sesame oil, red pepper flakes, ground ginger, and brown sugar, I added it to the ground beef and let it simmer for two minutes. That was pretty much it, I served it to my family and it was one of my families favourite meals I made. It was super rich in flavour, it had a bit of a kick to it but the rice helped match it and everyone had seconds to the point there was no more food left.
