Mexican Rice

After watching the chef that came into the class from the college or university, I remembered everything I needed to do in this recipe to make it but of course I still read over the recipe. I found out when an actual chef says “a pinch of salt or a pinch of pepper,” it means A LOT of pepper or salt. I enjoy salt and pepper though so I don’t mind. It ended up tasting extremely flavourful and a hint of spice. Some people thought it was very spicy but surprisingly I didn’t find it too spicy either time. As you can tell in the pictures above that the dish was colourful and very appealing to the eye. It wasn’t a huge amount of time commitment and it would be worth making it because it was so yummy!

Veggie Frittata

My veggie frittata was very flavourful, thick, held together and cooked all the way through. I would rate it a 9/10 because it has most food groups, obtains low sodium, carbs and fats. Before putting everything together my partner and I had to pre cook the potatoes. We put them in the oven with oil and some salt and pepper after cutting them up into thin slices. We did this because we wanted to be fully cooked. This dish was very filling and I would recommend making this for a lunch at home with any ingredients I have lying around my home. Its very similar to an omelette and a quiche but in my opinion I liked the flavours and tastes of the frittata over the other two. I used my knife skills and used prior knowledge to help myself succeed in finishing this dish!
