Another Pork Tenderloin

My Reflection

I really liked this pork tenderloin because I was not a fan the last time made it so this time I made it differently. This time I just seasoned the pork and baked it in the oven. The juices and seasoning tasted so well together. I made lemon juice infused mashes potatoes and it tasted so much better then the last time I made mashed potatoes because I mashed them longer to make sure there was no lumps. The broccoli was steamed but i should have roasted it in the oven, However this pork tenderloin dinner tasted so much better and I would make this again.

Casserole

My Reflection

This casserole dish is a family favourite. It has seasoned cubes chicken. Raw small pieces of broccoli. And the creamy sauce covering the entire thing. Topped with shredded cheese, and then baked in the oven. We serve this over brown rice and it is one of my favourites. The cheesy, creamy chicken and broccoli tastes so good together and added over perfectly cooked rice taste delicious.

Stir-Fry

My Reflection

This keto stir-fry was made with cauliflower rice, chicken breast, broccoli, peppers, mushrooms, and onions. This was a very filling and delicious dinner. We never really eat stir-fry, however since my mom started keto, we have been trying new recipes. This was a flavourful dinner and i would make it again with a few changes. I would cube the chicken instead. I would shop the broccoli smaller. And finally I wouldn’t add mushrooms. Despite these flaws, the dish was amazing and we have made it multiple times because it is simple, and healthy.

Cauliflower Mac and Cheese

My Reflection

This dinner was for my mom. She wanted to try this keto friendly mac and cheese for awhile and so did I. I chopped up the cauliflower in pasta sized pieces and I practically steamed the cauliflower. The cheese sauce was pretty much made from cream cheese and cheddar cheese and milk. The cheese sauce was not very think like regular Mac and Cheese. This was a fun lab but I definitely prefer regular pasta Mac and Cheese over this keto friendly dish.

All Canadian Dinner

My Reflection

This dinner included, mashes potatoes, steamed carrots, cauliflower rice, and chicken breast. The mashes potatoes were seasoned with chives and garlic. They were mashed very well because there were almost no lumps in them. The carrots were steamed perfectly, not too much and not under cooked. The cauliflower rice was okay. I seasoned it, and i tried something new but I didn’t like it very much. The chicken breast was very juicy and flavourful. I baked it with poultry spices, put a thin layer of shredded cheese so it melted when they baked. When it came out of the oven, I topped it off with green onions and bacon bits. I loved this dinner, except for the rice, and I would totally make this again.

Keto Korean BBQ

My Reflection

This is one of my favourite dinners now. This is ground beef simmered in a BBQ glaze that is sweet but also spicy. It is served over cauliflower rice. It was a little more sweet then I expected but once I mixed it together with the rice, it didn’t taste as sweet. My entire family was impressed with this keto dinner, and so was I. I really enjoyed the texture and the flavour of this dish. I have never really eaten Korean food, but this was amazing.

Rice Krispie Treats

My Reflection

This home-lab was a gift for my auntie. She found out I worked at Starbucks and had asked me to bring her some rice krispies because she loves them so much. When she said this, it gave me the idea to make her them myself and that’s what I did. I made a full pan of them for her and she loved them. She really enjoyed this bars and i had a lot of fun making them for her.

Pancakes

My Reflection

I love pancakes! My friends came over for a sleepover and we decided to have a nice breakfast together. I made the pancake batter from scratch and the pancakes cooked very evenly and the were golden brown. They were light and fluffy with lots of air pockets because I sifted the dry ingredients. I then finished off the breakfast with breakfast sausages and scrambled eggs. My friends were very impressed and I had a lot of fun cooking for them and surprising them with this breakfast.

Greek Night!

My Reflection

This was one of the more challenging home-labs I have ever made because there are a lot of components to this meal. The mini lemon and garlic potatoes. The rice made with chicken stock instead of water and a squeeze of lemon juice to bring out different flavours and to make it more traditional. The grilled, buttered pita bread. The Greek chopped salad with the homemade olive oil, lemon and seasoned dressing. And finally the Greek chicken seasoned with pepper, salt, garlic, lemon juice, and a poulty blend seasoning. I was very happy when this dinner turned out well. Nothing was over cooked, however the bottom of the pita bread got a little bit burnt. Everything came together and my family was impressed and proud of me for making this beautiful dinner.
