This was one of the more challenging home-labs I have ever made because there are a lot of components to this meal. The mini lemon and garlic potatoes. The rice made with chicken stock instead of water and a squeeze of lemon juice to bring out different flavours and to make it more traditional. The grilled, buttered pita bread. The Greek chopped salad with the homemade olive oil, lemon and seasoned dressing. And finally the Greek chicken seasoned with pepper, salt, garlic, lemon juice, and a poulty blend seasoning. I was very happy when this dinner turned out well. Nothing was over cooked, however the bottom of the pita bread got a little bit burnt. Everything came together and my family was impressed and proud of me for making this beautiful dinner.
