Cauliflower Mac and Cheese

My Reflection

This dinner was for my mom. She wanted to try this keto friendly mac and cheese for awhile and so did I. I chopped up the cauliflower in pasta sized pieces and I practically steamed the cauliflower. The cheese sauce was pretty much made from cream cheese and cheddar cheese and milk. The cheese sauce was not very think like regular Mac and Cheese. This was a fun lab but I definitely prefer regular pasta Mac and Cheese over this keto friendly dish.

Keto Korean BBQ

My Reflection

This is one of my favourite dinners now. This is ground beef simmered in a BBQ glaze that is sweet but also spicy. It is served over cauliflower rice. It was a little more sweet then I expected but once I mixed it together with the rice, it didn’t taste as sweet. My entire family was impressed with this keto dinner, and so was I. I really enjoyed the texture and the flavour of this dish. I have never really eaten Korean food, but this was amazing.

Homemade California Rolls

My Reflection

Sushi was very unexpected for our foods class because we had never done anything like this before. I believe it is safe to say everybody (including Ms.Bolli) loved this lab! It was not as hard as I thought it would be. The only thing I wasn’t expecting was how sticky the rice was and how hard it was to put on the seaweed evenly everywhere because it kept sticking to my hands. When I was eventually able to spread the rice everywhere and evenly, I was able to slice up the cucumbers very thinly, and Ms.Bolli had the crab mixture for us. Once I placed a small amount of filling at the end of the rice covered seaweed, I was ready to roll my sushi. The rolling went pretty smooth, the seaweed didn’t stick to the rolling mat cover in plastic wrap. Once we watched a video on how to roll the sushi, it made a lot more sense and I was able to roll the sushi tightly in one try. I would love to make this sushi again because it was so much fun and I really enjoyed this. The sushi tasted so good and was very delicious.

Mac and Cheese

My Reflection

Mac and Cheese is one of my favourite things because I’m a very picky eater and this is a very simple thing. My partner and I added chopped spinach and diced bacon. My partner and I added some spice to our cheese sauce and it worked well. We really enjoyed our pasta and I have never made mac and cheese without spinach. I liked this lab because I like to find new flavours to add to certain foods that I eat.

Tomato Soup with Rustic Bread

My Reflection

The tomato soup was perfect and my favourite soup! My group and I all seasoned it together and it tasted even better then I had ever made it. It was super creamy and blended all the way through with no chunks inside. This lab was really fun and gave my group and I a chance to sit, eat, and talk with each other because we worked fast to get it done. I learned a lot from this lab, not really about cooking but more about my classmates, and group members.

The rustic bread was really easy and simple recipe. I have made this bread before so this time I took a step back and just helped my partner as she took the lead. We were able to have out bread triple in size after it rested overnight. When we cut into our bread, we had air pockets which means the dry ingredients were sifted enough to add extra air! This bread tasted so amazing with the tomato soup!

Buddha Bowl

My Reflection

My Buddha Bowl turned out way better this year because is the previous years I added different types of veggies or fruits or grains that were advalible, but I didn’t really like them. This year knowing all things I’ve tried together that i didn’t like or did not work well together, I could finally create a simple, but still filling Buddha Bowl. I really enjoyed this lab because it showed off my knife skills. I finally really enjoyed this salad because it was my favourite veggies, with a simple hummus and brown rice at the bottom of the bowl.

Broth Mexican Style Based Soup

My Reflection

My group and I made a Mexican style soup. We added chicken, black beans, corn, and some roasted tomatoes. We added some taco type of seasoning to our chicken broth and cilantro. We let it simmer down which let the Mexican flavours pull through. I can be a very picky eater, which is why I do not usually eat soup, however this soup was one of my favourites. This lab was very fun to do because it was a very rustic lab that we just tested out flavours with our previous knowledge of food and spices. I have definitely made more soup with flavours I’m used to after this lab.

Italian Pizza

My Reflection

My thin crust, Italian style pizza turned out so well. It was one of my best labs. I added spinach, mozzarella and parmesan cheese, and of course tomato sauce. We rolled the dough out really thin, and stretched it out as much as we could. We added another thin layer of tomato sauce. For my toppings I added shopped spinach, and big pieces of crumbled mozzarella and parmesan. This pizza tasted so much better then a bough pizza because I prefer a thinner crust with less tomato sauce and that’s exactly what our lab was about. We made our dough by hand and it was very fun to make this entire pizza from scratch.

Mexican Style Filled Burrito

My Reflection

This lab was a fun, quick and easy. We don’t like to waste food in our foods class so Ms.Bolli wanted too use up all our extra ingredients. This was a good lab to teach us how to use food in the fridge before they go bad. In my burrito, we made a homemade Mexican rice, black beans, feta cheese, and ground beef. It tasted really good and I would totally make this again with my family. It taught me to look in the fridge before cooking to try and use up the food before it goes to waste, and I believe this skill is really important because it also is saving money. The burrito turned out really well, and I’m very proud of how my group and I worked to do this lab without a recipe. I’m also very proud of how I rolled my burrito because it was tight, and didn’t fall apart.

Mexican Rice

My Reflection

Chef Evan came into out class and taught us his recipe for his take on Mexican rice. It was an amazing experience for a professional chef to teach us! I really enjoyed learning and seeing his tips for cooking this dish. I loved this dish and have made this a few times for my family and they have enjoyed it as much as I did with a few modifications! I learnt some new things by making this dish; how to season with a rest break so the flavours enhanced over the rest, and how to perfectly cook rice with not just water.
