Cream Of Mushroom Soup

REFLECTION…

For this lab we were given a list of 4 different soups that as a group we had to choose one to make, me and my group chose to make the cream of mushroom soup because it seemed to be a soup that we all enjoyed and for me, i personally chose the soup because i wanted to learn to make it the most.

What went well for me was my communication with my group and we also did a good job in following the recipe and staying on track, our time management skills were also on point as we did a great job trying finishing the recipe with the little time we had the block. i also felt i did a good job in taking responsibility and helping my group anyway i could.

Next time i have to work on my accurate measurements like when i had to make measure the milk and cream, i little more then my group wanted but i don’t think it was a huge deal but i still want to learn to improve on that particular skill in the future. I also feel that we need to work on our organization skills a little bit, overall they were pretty good but near the end we could have been a little better.

Overall i was pretty proud with how it turned out and i’m glad to have made it and made it with my group. I would definitely make it again but next time i would like to add a bit more cream to make it a bit thicker cause it wasn’t that thick when we had it. But i still really enjoyed it and for those reasons i would probably give myself a 4.5/5 stars.

Design Your Own Broth Base Soup

Reflection…

For this lab we had to find a broth base soup recipe with our new groups to create the next day. The soup we decided to make was a Chicken and Dumplings soup, it was originally a cream based soup but we tweaked it a bit to make it follow the criteria that we were given, we got rid of the heavy cream that was originally needed and switched it with normal chicken broth and added some flour to help thicken it.

What i think went well for me was i had a lot more confidence, i felt i didn’t really have to ask much questions and i feel like i helped out my group a lot and i tried my best to help when it was needed. We also had great communication if we needed help or clarification on the recipe then we were helping each other out with that, finally our time management skills were really good, we were able to finish the soup and clean up with time left to spare.

I think that next time we need to be a little more prepared and make sure we have everything sorted out before we start cooking because we made the mistake of accidentally choosing to make a cream base soup instead of a broth base soup so we were a little suck when trying to figure out how to fix it, but we were able to get everything sorted without much set back but hopefully next time we can be more prepared and ready to go.

Overall i think the soup turned out great and me and my group ended up working very well together which i think was what part of this lab was about, getting to know our new group members and being able to make a great soup to show off how good our teamwork is. I was very proud of how the soup turned out and i never had a Chicken and Dumplings soup before so i’m so glad we made it. I would definitely make this soup again it was great but next time i think i might add a little bit more vegetables into the soup to fill it up a little more.

For these reasons i think that i would give this recipe and lab 5 stars, i’m really glad to have done this lab it was a good learning experience, i am also glad to have worked with the group i was put into.

Breakfast Home Lab

REFLECTION…

For this huge home lab project we had to find three different breakfast recipes, two breakfast foods and one smoothie recipe. I decided to make a Hash brown breakfast casserole as my main dish, a Cinnamon Apple overnight oats as my more of a side dish, and finally a Very Berry Vanilla smoothie as my drink.

The parts that went well for me were my ability to work independently and trusting my own instincts when making certain decisions in my recipes, i feel i also improved a little in my knife skills where i had to cut the potatoes and bacon for my casserole, finally i think that i did a very good job in making sure i followed the recipes to how they were intended.

Next time i think i gotta work on my mise en place skills which is extremely important when doing bigger recipes that require quick transitions and if there not complete then it could end up making the recipe to take longer then intended, i could also work on improving on my time management skills just a bit because i was pretty good at staying on schedule but it still could have been better.

Overall i was very proud of how the final products turned out and i would 100% make most of them again, i really enjoyed Breakfast casserole and my family liked it too, but i don’t think i’ll make the overnight oats again cause it just really wasn’t for me but it was still fun to make it. Finally i would make the smoothie again as well but next time i would probably add less protein powder and maybe more berries instead because the powder kinda took a bit of the flavor away for me so maybe i can try and improve on it so there can be more flavor there for next time.

For these reasons i decided to give myself 5 stars because everything turned out great in the end and i feel this lab was an important one for me because it showed me that it’s important to not over think things in recipes and that confidence is an important skill to becoming a great chef. So i’m glad i did this project and i feel that this will help me in the future become a better cook.

Bacon Cheese breakfast rolls and Dutch Baby Pancakes

REFLECTION…

For this big breakfast lab we were tasked with finding two recipes with our groups to make in class over two days, where we would all spread the food out like a big breakfast buffet and some teachers and students would come in to try it. For my groups breakfast ideas we decided to make some breakfast rolls with bacon cheese and eggs, and some Dutch pancakes.

some of the things that went well for me and my group throughout the lab was our ability to be quick minded which came in handy when there were some changes in our recipes, i also believe that we all communicated very well with each other, and i also think i did a good job in helping out my team when they needed it.

Some things i need to improve on are being more confident in the kitchen for example preparing the bacon i was asking a lot of questions like if it looked ready or not, when it wasn’t necessary. I also need to improve a little on my time management skills because when it was getting close for us to start bringing our food out, we were a little behind to do so. Also there was supposed to be scrambled eggs in the breakfast rolls but due to the lack of time we ended up just not making it.

Overall i think the breakfast buffet went really well and we got a ton of positive feedback for our food and i was super proud of how everything turned out. Next time i make these recipes i’m gonna make sure i add the scrambled eggs as intended in the recipe.

For these reasons i think i deserve a 4.5/5 on the make your own breakfast lab.

Mexican Rice

REFLECTION…

For this lab we were given a demo by Chef Evan, a talented chef who showed us how to make Mexican rice and shared with us different tips and tricks to make this particular dish perfect. The recipe introduced to us with many different knife skills and with the idea of seasoning your dishes to taste which done right can really add some flavor to your food, the idea wasn’t new to me but it’s always cool to learn how to improve my dishes from someone who’s familiar with the trade.

What went well for me was my ability to take more responsibility while cooking this lab, i helped my group whenever they needed it, and my knife skills also improved a lot due to having to cut a variety of different veggies throughout the recipe. But i think i have to work on following the recipe a little better and make sure i’m putting the right things in at the right time, also to try to be a bit more confident which overtime i think i’ll be able to master.

Overall i think the recipe turned out all right but i could have turned out better, i added water when i wasn’t sure i was supposed to, and it ended up turning out a little more watery then intended but luckily me and my group were able to fix it but it still could have been better. I would like to make this again and i would try and fix my mistakes from before to try and make it the way it was supposed to be.

For these reasons i decided to give myself a 3.5/5 stars, it wasn’t my best dish but it still turned out pretty well in the end.

I would like to thank Chef Evan for coming in and teaching us some cool things and skills that i hope to master in the future.

Rustic Bread & Shakshuka w/ Feta

REFLECTION…

For this lab we had to do a double recipe, we had to make some rustic bread which was quite a new way to make bread for me which i was super curious to see how it would turn out. We also had to make something call a Shakshuka which was a dish i never heard of before as well so this lab was i very new thing for me which made it more fun to make and taste. The methods we used to make these recipes were flour mixture and yeast bread for the rustic bread and egg cookery, knife skills and mis en place for the Shakshuka. For the recipe we had to do it within two days, we prepared the bread and let it sit and rise overnight on day one, and on day two we made the Shakshuka and cooked the bread which we ate at the end of that class. What went well for me was communicating with my group in the kitchen, time management by quickly finishing the recipes and cleaning up our unit while everything was cooking and getting ready to eat, and finally i thought that my knife skills improved a whole lot throughout the lab. I think that the one of the big things i need to work on is trying to step up in my unit because i want to try and improve my cooking ability and skill so to do so i think i need to try and take responsibility for more tasks in the kitchen, this would benefit me and my fellow teammates.

Overall i think that it was a very successful lab and i was very proud of how the final product turned out and i would definitely make this again at home because it would be a cool thing to show my family what I’ve learned in class by making them a more complex dish like the Shukshuka. For these reasons i think that i would give mine and my teammates performance during this lab 5 stars

Basic Crepes with Blueberry sauce

REFLECTION…

In this lab we had to make some basic crepes which is a breakfast that i personally enjoy, we also had to make a delicious blueberry sauce to go with them. I think what went well for me during this recipe was my communication with my teammates, being able to follow the recipe and for taking responsibility in the kitchen when needed. But for next time i feel i need to work on being more confident in the kitchen and not always having to ask my teammates questions that aren’t necessary to ask, i feel that i need to just go with my instincts and trust myself to make right decisions in the end. Overall i was pretty proud with how they turned out and i was proud of the crepes that i was able to make. I would definitely make this again because they are fairly easy and they taste super delicious and would make for easy fast breakfast to make for my family over the weekend and i would also like to try and add other fruits to my crepes to try and test different flavors in the recipe. For these reasons i believe that i deserve 4.5/5 stars for my crepes and blueberry sauce.

Veggie Frittata

REFLECTION…

In this lab we had to create a veggie Frittata which is a recipe that I’ve never heard of before, which i was pretty excited to make cause i was curious to taste what it was like. For this recipe we had to use the egg cookery method which i was familiar with from past recipes, we also had to use knife skills which i had used before but i wasn’t super confident with. Throughout the recipe i think what went well for me was my communication with my teammates and i feel my knife skills improved a lot during the lab, i learned how to cut a variety of different veggies which i feel will be useful for me in future recipes at school and at home. I feel that i need to work on my time management which is a very important skill to have when learning to cook and i believe overtime i will learn to master this skill. Overall this was i really fun recipe to make and i would definitely make this again and i would try to add some different veggies and some other ingredients to maybe spice it up. I was super proud of how it turned out and i would say so far that this is the recipe i’m most proud of. For these reasons i gave myself 5 stars for how well i did, my group did, and how the final product turned out.

Design Your Breakfast Sandwich

Final Product

REFLECTION…

For this lab we were tasked with creating our very own breakfast sandwich. For my sandwich i chose to do an eggs Benedict style breakfast sandwich which included a poached egg, smoked salmon, bacon, avocado, and a creamy yogurt sauce to top it off. But unfortunately during the lab i ran into some troubles so i had to change the poached egg into a scrambled egg instead due to the yolk of the egg breaking. I would say what went well for me was my quick thinking when there were changes needed to the recipe. But next time i hope to improve on my time management skills and to follow the recipe better. Overall i would say that the sandwich turned out mostly the way i wanted it to, and i would definitely make it again so i could fix my mistakes from before and make it the way i wanted to originally. I ended up naming my sandwich the Seafood Benedict Breakfast sandwich which was very tasty and i’m proud of how it turned out.

Scones & Eggs Your Way

REFLECTION…

In this lab we had to make a double recipe, some flaky layered warm scones and a fresh egg of your choice which i decided to go with a poached egg, because I’ve never made one before and i thought it would challenge me a bit to make it. Overall what i think went well for me was being able to work well with my partner and helping out my partner while in the kitchen. Next time i think i need to work on being a little faster and improving on my ability to follow the recipe completely so the final product can turn out perfectly and finally try and take more responsibility in the kitchen. As for the scones and the egg in the end, i think they turned out very well, and i would definitely make these again because there pretty simple and would make for a great breakfast or brunch idea on the weekend.
