Greek Week

This was top down one of my favourite meals to make! It had so much flavours and tastes. I’m not sure if I have ever had greek food at a restaurant but now I want to go there asap. It makes me hungry just thinking about this meal. It too two days to make, on the first day I prepared the potatoes by adding everything together and par cooking them and for the chicken I mixed everything together and let it marinate overnight. This made it much easier for the next day so everything could be done at the same time. On the second day, I first made the pita bread and let the dough sit aside, while I put the potatoes and chicken in the oven, I then started to cook the pitas. While flipping the pitas every once and awhile, I started making the greek salad and once that was done I finished off with the tzatziki sauce. No one complained about this meal, it was so delicious and I really want to make it again in the summer because it tasted like heaven. For the cookies, I made them after washing the dishes but these didn’t turn out as well. While following this recipe I added the amount of salt, it seemed like a lot but I trusted the recipe and I regretted that decision because all I could notice while eating them was the salt. Other than that everything turned out perfectly!

Korean rice bowl

This dish was pretty simple and tasted so flavourful! I was searching up recipes to make for dinner because my mom wanted me to make dinner to help her out and this one sounded appetizing. It only took 20 minutes to make, I got the ground beef out, put it on the stove and cook it through till there is no pink. In the meantime I got the rice going. I then mixed together soy sauce, sesame oil, red pepper flakes, ground ginger, and brown sugar, I added it to the ground beef and let it simmer for two minutes. That was pretty much it, I served it to my family and it was one of my families favourite meals I made. It was super rich in flavour, it had a bit of a kick to it but the rice helped match it and everyone had seconds to the point there was no more food left.

Risotto

This is the risotto I made this week for foods, I watched the videos and decided to make mine with lots of veggies and meat so it would have lots of protein and vitamins. For the vegetables I chose; carrots and peas because I thought they would match the risotto recipe well. For the meat; I decided to use chicken and some leftover a type of sausage, sorry I forgot the name of it. When I first found out we were making risotto for a meal this week, I thought I wouldn’t enjoy it but to my surprise, it turned out really well. It kind of reminded me of fried rice but more creamy and of course without the egg! I would make this again without a doubt, it was filling it had a lot of the food groups and it just tasted so yummy! Just thinking about this recipe has made me hungry!

Chicken Parmesan

For dinner this week I decided to make chicken parmesan and roasted broccoli because it sounded delicious and I made chicken parmesan before and it turned out really well so I wanted to attempt making it a second time. For the broccoli, I drizzled a bit of olive oil, some salt, pepper, garlic powder, and onion salt. I then put it in the oven for 20 minutes. For the chicken, I tenderized them, had a bowl with flour, salt, and pepper. The next bowl I had stirred eggs and the last one I had Italian breadcrumbs. I put the chicken in each bowl in the order I wrote and then added them to the pan. I cooked the chicken in the pan for 2-3 minutes on each side, I then put them in a dish that surrounded it with tomato sauce. After the chicken was all in that dish, I added a bit more tomato sauce to cover it and then added marble cheese because I didn’t own mozzarella, I added some leftover breadcrumbs to give it more flavour and finally added parmesan. This meal turned out well. I thought at first that I should have another side because it wouldn’t be filling enough for everyone but the chicken was extremely filling. No one went hungry that night!

steelhead salmon

I enjoyed the last salmon so much, that I decided to make salmon again! This time I made french fries to go along with it and cucumber for a vegetable, even though it technically not a vegetable, it’s a fruit because it has seeds. I found this time cooking really interesting because when I added the garlic and lemon juice to the salmon before putting it in the oven, the garlic turned blue. It’s hard to tell in the first picture but it did go blue. At first, I thought the garlic may have gone bad but what it ended up being a reaction from an acid mixing with the garlic. Lately, I have been eating a lot of salmon and it just tastes so good, every bite makes me think of how yummy it is. This salmon tasted delicious and I would make it again, it wasn’t too hard to make, the fries were harder to make, the fries were crispy because I added corn starch and the salmon and fries matched so well!

Tikka masala

This meal was delicious! I was wanting to make butter chicken but I couldn’t find two essential spices so I had to choose something different but similar. It needed one of the same spices as the butter chicken but I just searched up alternative spices to use instead so I could still make it. Instead of garam masala, I used curry but when I was eating it, I couldn’t taste anything off, it was so flavourful, probably the most flavourful dish i’ve made so far. The chicken needed to marinate for ten minutes to an hour or over night if possible but I chose the recipe just before making dinner so I let it sit for twenty minutes but it still was really moist. The only problem I had was the rice, I followed the instructions on the package to make it for 6 people and it for some reason barely had enough for 4. There was 5 of us eating and my mother was eating later due to a massage so I had enough to make more for her. Other than that, everything else turned out very well. I would make this meal again, it tasted delightful, next time I make it I will make nan bread to go with it!

Lemon and Herb Chicken with Fettuccine Alfredo

This time I wanted to try something different to the chicken so I decided to eyeball the chicken. I tenderized the chicken and squeezed lemon juice from a fresh lemon and added garlic powder, onion powder, rosemary, and salt for seasoning. I then cooked it for 15 minutes. For the fettuccine Alfredo sauce I followed a recipe. I added butter, salt, pepper for seasoning, dried parsley and I again didn’t have heavy cream so I searched up how to make homemade heavy cream. And of course parmesan cheese to make it cheesy. The pasta took a bit longer to cook, it tasted good. I added carrots because I knew there was any vegetables so I added them. I’d definitely make this again everything was delicious.

Cottage Pie

This is the first time I made cottage pie, I’ve always thought it was called shepherds pie but when I was searching up recipes I realized that shepherds pie uses lamb but cottages pie uses growing beef and that’s what I used. It turned out really well. I added mustard to the mashed potato to give it more favour, I read in the comments that it tastes better with it. I didn’t realize it takes an hour to cook but it was totally worth it, it tastes so heavenly. I first added the meat and onions to the pan and let the cook. I added the spices and then worked on the potato part. It needed Nut meg and it needed the regular things that mashed potato needs. After the meat was done, I needed to add the carrots, I didn’t have the celery but I don’t like celery so I didn’t mind.

Creamy Beef Pasta

I decided to make pasta for my family. My mom wanted me to cook with the ground beef hat was in the fridge and it was going to go bad soon so I found a recipe and cooked it. I’m used to making Kraft dinner from the box for a fast lunch so this was something different for a change, a challenge. I had every the recipe asked for except for heavy cream so I attempted to make my own. I searched up how to make heavy cream, the internet told me to add 2 teaspoons butter and a 3/4 cup of whole milk, I had both ingredients so I tried it. I melted the butter and whisked in the milk slowly as the recipe instructed and it turned out well. While eating the dish I honestly couldn’t tell a difference. I found it really interesting and this was my favorite meal I cooked all week!

Garlic Pork Chop and Baked Potato

Whenever I eat pork chops, my mom makes them and they aren’t always moist so I challenge myself to make moist pork chops. I am proud to say that they were really moist and had lots of flavor so that was an added bonus. The potato took the longest to make because it has to cook in the oven whole. So the first thing I had to do was the potato and when it was cooking for awhile then I started the pork chops. I had to change the recipe a bit for those because it told me to cook them on the stove first then put it in the oven and I don’t own a oven safe skillet that was big enough for my whole family so I just cooked in the oven. I also made applesauce to go along with it because you always need apple sauce with pork chops. With the potato, I put butter inside and then cheese over top so it would melt over top an it tasted like heaven! These were the best pork chops I’ve had!
