Cooking At Home #7

This week I made simple banana carrot muffins with cream cheese frosting. The recipe was on YouTube called Best Banana Carrot Muffins. To start the recipe I took the butter and both sugars and cream them together. Then added the two eggs and vanilla. I got really ripe bananas and mashed them and used a grater for the carrots and placed both in the bowl. It was time to add the dry ingredients which were the flour, baking powder, baking soda, salt and cinnamon. I gently mixed the batter and made sure not to over mix. These muffins baked for 25 minutes at 375 F and the house smelled amazing with all of the scents of cinnamon and banana. While that was baking I made up the cream cheese frosting with 1 cup of cream cheese, 1/2 cup butter, 1 tsp vanilla, 1 tbsp lemon juice and the 3 cups powered sugar. But there was a challenge which was I didn’t have enough powered sugar so I used the magic bullet to pulverize the sugar. Next time I will make sure to have all my ingredients and the frosting was a bit runny so I would put less butter about 1/4 cup. I took the muffins out of the oven to cool and then I frosted them with a piping bag. Besides the frosting being runny the muffin was very soft and moist on the inside and nicely golden brown on the outside. I would make these muffins again as they were delicious and perfect for a snack or breakfast.
